In the meantime, let’s get ready for New Year’s! Like the Super Bowl, New Year’s parties just scream for fun appetizers, don’t they?
Creamy Fiesta Corn Dip
- 3 cups frozen corn (or fresh scraped off the cob if you have it!)
- 6 ounces cream cheese (a little less than a whole block. use low fat, fat free…whatever you want!), softened
- salt and pepper
- 1 fresh jalapeno
- 2 tablespoons minced onion
- 2 tablespoons diced pickled jalapeno
Note: this is reasonably spicy. To reduce the heat level, take the seeds out of the fresh jalapeno, and only use 1 tablespoon pickled jalapeno. Then add more according to your taste!
First, put the corn in a microwave-safe bowl. Heat the corn for 2-ish minutes until it’s thawed.
While the corn is thawing, mince the onion and jalapeno. Cut off the stem of the jalapeno and cut the whole thing in half, then take out the seeds.
Then, cut each half into long strips and cut the strips into little bits. Nice!
Add the fresh and pickled jalapeno, cream cheese, and onion to the corn.
If you forget to get the cream cheese out in advance, no worries! Just add it to the bowl before the last 30 minutes of microwaving time with the corn and it’ll soften nicely.
Mix everything together and taste for salt and pepper.
And that’s it! Add more cream cheese if you want – I like the corn to be the main flavor so I don’t use very much. I do, though, sometimes add a splash of the pickled jalapeno juice for extra tang and spice – it’s delicious!
