So now that we’re officially past the unofficial first weekend of summer we can definitely start eating foods like this every day for dinner and all weekend drenched in rose, right?

Did you have any fun at all this weekend? It poured here all day yesterday and we spent Saturday and Sunday doing house project after house project because our addition is almost-basically-will-never-be-fully DONE, but done enough that we’re in it and frankly if the contractor never does his final few items then he never gets his final million dollars and that’s fiiiiiiine with us, you know? So we’re in the new space, it’s bright and fresh and clean and we are SO happy with it, and with that came a gazillion small and large organizing tasks, moving things around, hanging things on walls, all of the things. It’s far from done, but we did a ton of work on it this weekend and then tons of TV watching yesterday with Beck including her first experience with Moana, which was super special and fun. I’m not sure she grasped much of the story, but every time Moana made any kind of a sad face, Beck was certain “she just misses her Mama!”
So! Now that we used a holiday weekend to do chores, we are READY for summer. We’re kicking off our June with a baby sprinkle on Saturday for my bff Heather, and this is going to feature prominently on a very-massive cheese board that I have planned. I’ve made this a few times already in the spring, and have never had any leftovers, which is how I gauge the success of a new dish. The summer flavors scream at you in the best possible way: a quick pesto yogurt dip, creamy burrata torn over top, roasted cherry tomatoes for tang and to round out the caprese feel of the dish. Olive oil, salt and pepper top the dish AND the bread that I highly recommend grilling – grilling all of the things all summer is the name of our game.
OMG kill me now this is all I want to eat for the rest of my life. With wine duh. Maybe add some olives to the plate for vegetables.
I made this dip for an Oscars party, and it was devoured in addition to 3 other cheese-based dips. Why not, you know? We weren’t fitting into dresses. We were wearing PJs. The dish is inspired by a crazy-good appetizer we had last year at Biltmore House, of all places, at their on-site pub that is surprisingly really yummy. We didn’t order it again the last time we were there, but we saw a few people order it and kiiiiind of regretted our decision to try something new, even though the something new was delicious too.
So I made it at home the next day. It’s a pretty traditional garlic + wine + Swiss fondue, but we dot it with prosciutto that gets crispy in the oven and is just ridiculous over bread. RIDICULOUS.
Party could be swapped in for parsley here, FOR SURE.
So, this summer, when I was on my blog break, my sister got married! To Ben. Ben hadn’t been around for suuuuper long, but he wears black plastic glasses and has a short beard and bald head like my husband, so we went with it. It’s rather uncanny.
But really! My sister and Ben had been together for about a year and are both teachers, so I think they had a moment where they looked at each other, shrugged, and planned a wedding and a house sale and a move in 6 weeks. Quick and dirty was exactly what my sister wanted (I’m the same, the extended engagements aren’t our thing), so they got married and now we have a new brother in law and a new niece, who happens to be a killer baker.
Ben’s a great cook and experiments with new recipes a lot, which I appreciate at family events especially because I tend to make the same things for every holiday and feel annoyed at myself for not changing it up. A version of this classic cheese ball was present at Thanksgiving and I IMMEDIATELY knew that it needed to make an appearance on this blog for your Christmas spread. It’s a super easy recipe, but the contrast of the rich cheese and tons of parsley is just insanely delicious to me. See also: raw onion really finely diced that adds huge flavor to the ball after it sits in the fridge for a few hours. Not oniony, just flavorful. Promise.

I know this is kind of a Friday recipe but it’s Wednesday and sometimes Wednesdays just feel HOPELESS but then also you could use them to plan for the weekend and WHAT BETTER THING to do on the weekend but make lots of appetizers and watch football?
Make lots of appetizers and watch Step Up, Magic Mike, Pitch Perfect, and Princess Diaries 1 & 2, but I rarely get to do what I want on the weekends. My life is incredibly hard.
So, whatever your poison on the weekend, PLEASE go ahead and plan to make this soon. Or maybe for a certain really important football game coming up in a few weeks?
This dip tastes like a jalapeno popper but takes approximately 10 minutes to make, doesn’t include frying, and can be made ahead and taken to a friend’s house so, I think BETTER than a popper. Also no American-ish cheese, not that there’s a damn thing wrong with that. Let’s make it!
