Here’s our new super duper easy one-pot dinner for fall!
I have been SO excited to share this with you. Creamed Spinach Mac and Cheese. It’s one of those really nice unicorn dishes that everyone likes, that has veggies in it, that is comforting but not so heavy that we can’t eat it on a Tuesday, checks a lot of boxes.
Let’s break it down: We are boiling some noodles, and we aren’t messing around with a roux/white sauce. We’re stirring some dairy stuff together super quickly because we’re hungry. Fresh nutmeg grated with Microplane’s Spice Mill adds tons of flavor with zero effort, and garlic + handfuls of greens round the whole thing out. How was your weekend? Are you in hurricane central? Are you OK? Did you have gorgeous almost-fall weather? We were right on the edge with a gorgeous weekend ending with tons of wind and feeling ominous yesterday. We managed to get some great outdoor time in, hang with some toddlers, and generally enjoy ourselves before an insane week starts up. Beck is doing some exciting teething that involves tantrums and medicine and naps on our chests, which we love and hate and love, but we are muddling through.
We are muddling through with THIS. One of our new favorite weeknight dishes, and really it can be two meals – chicken and pasta. Together, they’re delicious with creamy pasta and spicy chicken. I first made the pasta on its own and we loved it, the sauce comes together super quickly with no roux or whisking, just heating some milk and melting cheddar right into the cooked pasta. The broccoli (or broccolini!) is roasted in the oven while you work on the pasta and chicken. The downfall there is that there are a few dishes to this meal, but all of the components are super simple and the end result is delicious.
Verde like….salsa verde. With pasta and sour cream and chicken and local peppers so it’s a vegetable too. A health food!
I’m super into salsa verde or anything with that tangy, bright Mexican feel. Green hot sauce is my jam, restaurants that serve verde instead of red salsa are my home, just goo all around. I think verdent is the word we’re looking for, right? e pu
This is similar to the Caesar pasta I made a few weeks ago in that you can very easily use leftover chicken + pasta or make it all right then and there. I’ve recently been making a whole box of pasta at once when I know we won’t eat it all and then using the leftovers for stuff like this. I do this mainly because I don’t want to wash “the big pot” twice. Plus, you can’t tell that you’re eating leftover pasta, so why not? It works.

It has vegetables so it’s a health food!
So, this is my thing. I used to work for a pediatric obesity clinic and it was my most favorite thing ever. But, by “work” I mean “intern,” which means “work for free because I was in grad school and almost 30 and needed the hours to graduate.” So I couldn’t stay there, but I loved it so much because I got to counsel children and families and teach cooking classes and talk about exercise, and it was just the best ever.
Anyway. While I was there I preached the idea that you really need to ingest 5 servings of fruits and vegetables per day, no matter what. It was part of a whole plan of being healthy as a lifestyle, not just to lose weight, because teaching kids to lose weight just isn’t a good idea. Kids need to know how to LIVE, not how to LOSE. It’s an important distinction.
So. Mac and cheese! It’s ok for it to be a part of life, and even better if it includes veggies. So that’s what we did: roasted some summer veggies, added them to the most flavorful mac you ever did meet, and BOOM dinner. Add a salad a lean protein and you have a seriously balanced meal.
