Roasted Salsa Verde

Do you remember that show about polygamy with Bill Paxton on HBO called Big Love?  IMG_0709

I loved that show.  It was coming to an end just as Jay and I met, and he watched all the last episodes with me in our teeny little apartment.  

Anyway, there was a scene one time in Big Love in which all the wives were having a family meeting.  They were upset about something, and the head wife said “well Bill (the patriarch), in his wisdom, has decided that this is what’s best for our family.”

My sister and I were watching that particular episode together and just DIED.  I don’t know why.  We really enjoyed the sentence structure, maybe?  Or the absurdity of it? 

Since then we talk about ridiculous people who make ridiculous choices in that exact same way.  In their wisdom, they have decided to be ridiculous.

In my wisdom, I have decided that we should choose to be happy on Mondays, instead of saying things we always say like MONDAYS SUCK and WHERE IS THE WEEKEND.  

Nope, we’re lovin’ Monday.  I have also, in my wisdom, decided that salads can be eaten any time, and Mondays should be celebrated, preferably with chips.  Chips dipped in easy peasy vegan homemade salsa verde!  

Yes.  In my wisdom.

I know that everyone’s going nuts with healthy recipes, and I promise I’ve got some of those in the works for ya.

This is kind of healthy, though?  It’s still chicken.  White meat, with seasonings, hardly any added fat.  If you douse it in cheese and sour cream and wrap it in something made from refined flour that’s on you.  I’m helping you be healthy here. 

This chicken is DELICIOUS, and a really great basic recipe that you can use in tacos, burritos, salads…you name it!  I did tacos for this meal because, um, delicious, but you could do a ton with this basic recipe.

Because, clearly, we need more carbs.  

YAY FOR THIS AWESOME NEW SNACK!  I made pizza for my family a few weeks ago because I felt like it, and a byproduct of that fun lunch was a leetle bit of leftover pepperoni, which of course I decided to use in an obnoxious way to make THIS.  A quesadilla topped with pizza stuff.  If you ever want to throw nutrition by the wayside and really impress your kids, this is your “please love me I’m insecure” go-to, 100%.

This pizzadilla is easy, doesn’t take long to make, it’s REALLY good, and you will love love LOVE it.  Promise.  Let’s not waste a single minute!
