This is so delicious! I’m not going to give you any quantities because this is REALLY the easiest throw-together dinner but with magical, wonderful flavors and a perfect balance of carbs, protein, and vegetables. There are tons of ways to change it up, too, so get creative with this layering idea and use it often!
This time of year my body just craves foods that are creamy, warm, and comforting. I’m definitely a big fan of creamofanything soups in classic southern dishes, but sometimes the comfort food is way more fun when the flavor base comes from other countries.
I made this a few weeks ago when my parents and sister (only one of them…it was weird) came over for dinner. This is a perfect meal for entertaining because it’s flavorful and special, but you can make it well in advance and let it sit on the stove for up to 3 hours until you’re ready to serve!
I just love not being rushed at the last minute when I have people over for dinner. It allows more time for boxed wine consumption and dog-heckling. Try it sometime!
The problem with that is that most foods, namely desserts, that have those flavors can be pretty unhealthy. I like to eat WAY TOO MUCH to blow calories on one heavy dessert, so I like things in small bites that use fruit instead of unhealthy fillers to add volume without calories to the dish.
These bite-sized desserts are perfect for a party or as a quick dessert when you feel like you should have a dessert but don’t necessarily feel like baking – they’re easy!
Sick of the cold already? Me too. I was actually already sick of the cold a few weeks ago, so when we celebrated my mom’s 30th birthday we thought it would be fun to have fun, light food instead of something heavy that reminded us that winter’s coming fast!
These fish tacos were perfect for that!
This, my friends, is what we’ve been leading up to all week. And, WHAT better main dish to combine with all our healthy sides than lean, flavorful protein with BEER SAUCE? Beer Sauce! They are so easy to make and you can top them however you like!
