Welp.
We ate vegetarian last night.
And the night before.
We eat vegetarian many nights each week, but Jay liked what we had so much that I felt compelled to tell you about it.
There are no pictures. Sorry.
Basically, we had burritos. With red sauce made from 1 small can of tomatoes with chilis, ¼ cup Valentina's hot sauce, and ½ cup tomato puree. It's so delicious - I made this sauce ALL the time. Remember when I did it over mushroom burritos?
The filling was what Jay liked the best. Instead of meat or mushrooms, as I've been known to do, I cooked 2 Boca burgers in a hot skillet, then chopped them up really finely to create a fake ground beef. The flavor was still really good, and I used the method I use when I made these beef tacos - same flavorings and everything. It was great, and a nice way to get a little more soy/protein into our meal without meat!
We don't eat a ton of soy products because they aren't great for women's reproductive systems (sorry I'm telling you all this), so usually when we eat vegetarian we go straight veg, like with this country vegetable plate. But, sometimes it's nice to have a beefier flavor, especially with Mexican food.
There were homemade refried beans on the side, too.
Do you have ways to cut out some red meat? We all know it isn't the best thing to be eating a ton of, but it's a nice flavor to try and mimic with other ingredients! For the burritoes, I just filled a large shell with some Boca filling and pepper jack cheese, then rolled it up and covered it with the red sauce. I baked the burritos at 375F for 20 minutes, and we had burritos!
Mexican food. Maybe for dinner tonight? I might make it again....
